AUTUMN SALAD - VEGAN & GUT-FRIENDLY

Ingredients

Salad

  • ½ butternut pumpkin, cubed

  • 1 head of cauliflower, chopped into florets

  • 1 can organic chickpeas, drained and rinsed

  • ½ bunch kale, chopped

  • 1 handful dill, chopped

  • 1 handful parsley, chopped

  • 1 tbsp sumac

  • Olive oil

  • Salt, to taste

Dressing

  • 1 ½ tbsp tahini

  • 2 tsp sumac

  • Juice of 1 large lemon

  • 3 tbsp olive oil

  • Salt and pepper, to taste

Instructions

Roast the Vegetables

  • Preheat oven to 180°C.

  • Place cubed pumpkin on a baking tray, drizzle with olive oil, sprinkle with sumac and salt.

  • Place cauliflower florets on a separate tray, drizzle with olive oil, sprinkle with sumac and salt.

  • Roast for 25-30 minutes or until soft and slightly golden. Allow to cool slightly if serving cold.

Prepare the Salad

  • In a large salad bowl, arrange the chopped kale as the base.

  • Add the drained chickpeas.

  • Layer the roasted pumpkin and cauliflower on top.

  • Sprinkle with fresh dill and parsley.

Make the Dressing

  • In a small bowl, whisk together tahini, sumac, lemon juice, olive oil, salt, and pepper until smooth.

  • Adjust seasoning if needed.

Assemble & Serve

  • Drizzle the dressing over the salad.

  • Toss gently to combine or serve with the dressing on the side.
